3 cups lukewarm buttermilk
1 package yeast
7 cups flour, divided
1 tsp Soda
2 tsps. Salt
3 lightly beaten eggs
1 stick (1/2 cup butter
1/2 cup sugar

Directions:
Directions:
Into a large mixing bowl measure the buttermilk and add yeast and 3 cups of the flour. Beat well. Let stand for one hour, covered. Measure into another bowl the remaining 4 cups flour, soda and salt. Add to buttermilk mixture the beaten eggs, melted butter, sugar and flour mixture. Do not overbeat but blend well. Cover and let rise for one hour or until light. Punch down with spoon. (Dough will be quite sticky). Cover and place in refrigerator overnight. For hot rolls, take out of refrigerator three hours before baking. Roll out and allow to rise, covered three hours. Bake at 400 degrees for 10 - 12 minutes or until done. Makes about six dozen rolls.
