Directions:
Cut each slab into two pieces. Rub with favorite pork rub and
pour Mojo Creola (found in Mexican section in grocery store)
over ribs, cover pan with foil and refrigerate at least 2 - 3
hours.
Remove from refrigerator and allow to come to room
temperature
- about 45 minutes.
Preheat over to 300º. Arrange ribs in pan so they do not
overlap and cover with foil. Bake about 3 hours or until meat
almost come loose from the bones.
On a preheated charcoal grill, place the ribs, meat side down
and brush on your favorite bbq sauce. After 2 minutes, turn
them over and brush tops of ribs and allow to cook another 2
minutes or so - just to get a little crispness to the meat.
Serve immediately.
