1/2 lb. bacon
1 green pepper, diced
1 medium onion, diced
8 oz. stewed tomatoes
1/4 tsp. pepper
1 lb. ground beef
1 3/4 c. water
8 oz. tomato paste
1 tsp. spicy mustard
1 1/3 c. minute rice

Directions:
Directions:
Cook bacon until crisp, remove from pan and set aside. Brown ground beef for 5 minutes in bacon drippings. Add green pepper, onion and rice. Stir and cook for additional 10 minutes. Add all remaining ingredients. Bring to a boil. Reduce heat, cover tightly and simmer for 10 minutes. Right before serving, crumble bacon over top of rice.

This is fantastic as a side to my white enchiladas, but can also serve as a main dish with a nice salad. Enjoy!
