1 lb. skinless boneless chicken breasts, cubed
2 t. poultry seasoning (you can use whatever you usually use to season chicken)
1/2 box penne pasta (I use mini penne)
1 lb. asparagus, trimmed and cut diagonally in thirds
2 medium chopped tomatoes
1/4 C chopped fresh basil (I used dried and it was still delish!!)
1 container feta cheese
2 garlic cloves minced (I used garlic powder and still great)
1 T extra-virgin olive oil
1/4 T salt

Directions:
Directions:
1. Season chicken and cook through.
2. Meanwhile, cook the pasta according to package directions. Rinse with cold water and transfer to medium bowl.
3. Cook asparagus in boiling water until crisp-tender, about 3 minutes. Drain, rinse with cold water to stop the cooking and add to pasta.
4. Add chicken, tomatoes, basil, cheese, garlic, oil, and salt; toss well to coat. Serve.

This is a recipe out of a Weight Watcher's cookbook that I have modified. It is delicious, super easy & fast and I feel like I am losing weight while I eat it. :> You can also substitute the asparagus for another green vegetable if it is not in season such as snap peas, snow peas, or broccoli.
