2 egg whites
1/2 tsp. salt
1/4 tsp. cream of tartar
2/3 c. granulated sugar
1 tsp .vanilla extract
1/4 tsp. almond extract (omit if you use mint
chips)
3/4 c. chocolate chips (mint chips are good)

Directions:
Directions:
Heat oven to 350º. In a large mixing bowl, beat egg whites until frothy. Add salt and cream of tartar; beat again. Gradually add sugar and vanilla and almond extract. Continue beating. When peaks begin to form and the mixture is shiny, stop beating. Fold in chocolate chips. Drop onto greased cookie sheet by teaspoonfuls. Place in oven and turn off heat. Keep in oven for 4 hours or overnight.
