1 lb top round steak ½-3/4” thick
meat tenderizer
5 T. oil
1 lg, onion (cut in thin wedges)
1 green pepper (cut in squares)
1 can pineapple chunks (13-1/4 oz)
2 T. ketchup
1 T. vinegar
2 T. soy sauce
½ tsp. sugar
1 T. cornstarch
3 T. cold water
2 firm ripe tomatoes (cut in 1/8’s)
Hot cooked rice

Directions:
Trim fat from beef, prepare meat one side at a time with tenderizer. (Thoroughly moisten meat with water, sprinkle with tenderizer, pierce meat deeply with fork). Cut beef diagonally across the grain in thin slices. Heat 3 T. of oil. Brown meat over High heat. Remove meat and drippings. Heat remaining 2 T. of oil. Add onion, green pepper. Stir fry until tender crisp. Add pineapple, ketchup, vinegar, soy sauce and sugar. Heat to boiling. Mix corn starch and water. Add to skillet. Heat until thick. Return everything to pan. Add tomatoes. Serve on cooked rice.
