1 small bag Pinto Beans
1 med. Onion, chopped
2 tomatoes
1/2 pkg. bacon or Ham bone
Cilanto, chopped
Salt & Black pepper

Directions:
For pinto beans, wash off VERY WELL first and then soak in water overnight. 1/4 of pan should be beans, 3/4 water. Tip: if beans don't agree with you, cook in the water the beans soaked in!! Soak with some black pepper and 1/4 onion. Simmer on stove for about 1 1/2 to 2 hours. (Can also follow cooking directions on bag.) Test if done...bean should be soft but not fall apart. While beans are simmering, fry bacon, remove from pan but leave some grease in pan, or just don't clean it too well! Chop bacon, tomato, onion and cilantro. Brown all in skillet used for bacon a few minutes. Add to beans, scraping everying in pot. Salt and pepper to taste. Simmer beans 5 to 10 minutes. Ready to serve. Great recipe to use up ham bone. Instead of bacon, when cooking beans add ham bone to pot. Remove when adding tomatoes & onion. Can also use this same recipe for black eyed peas.
