1 1/4 c. corn oil
2 c. sugar
3 eggs
1 tsp. baking soda
1 tsp. salt
3 c. flour
3 c. chopped peeled apples
1 c. nuts, chopped
2 tsp. vanilla extract

Optional Glaze
1 c. brown sugar
1/2 c. butter (1 stick)
1/4 c. evaporated milk
1 tsp. vanilla extract

Directions:
Directions:
Beat sugar and oil. Sift dry ingredients and add to the oil mixture alternately with eggs, beating after each addition. Add vanilla and fold in apples and nuts. Pour into a greased and floured tube pan. Bake at 350º for 1 1/2 hours.
Glaze -- Combine all ingredients in a saucepan and cook over low heat until boiled. Beat while
cooling. Glaze cake.
