Ingredients: 2 baked 9 inch pie shells. 1 qt. whole milk 2 c. half and half or 1 c. half and half & 1 c. heavy cream 2 Tbls. butter 3/4 c. sugar 3 egg yolks 1/2 c. sugar 1/4 tsp salt 1/2 c. corn starch 3/4 c. dark semi sweet choc. chips 1-2 squares unsweetend squares 1 1/2 tsp. vanilla whipped cream Dash of Tabasco

Directions:Reserve 1 c. milk for the corn starch. Put the remaining milk on top of a double broiler. Add half and butter, half, heavy cream and 3/4 c. sugar. Cook until butter is melted and milk is scalded. (Scalded is till is mells like warm milk. Almost a skin but don't burn bottom. No lumps or brown.) In a bowl, whisk egg yolks till broken up. Add 1/2 c. sugar and salt. Whisk well. Slowly add to warm mixture. Stir for 1 minute. Allow to cook for 20 minutes. Stir occationaly. Mix reserved milk and cornstartch till no lumps. Sowly add to hot mixture. continue to stir for 2 minutes and every 5 minutes for next 20 minutes. Now should be pudding like. Pour in chocolate chips and squares. Stir till smooth. Stir in vanilla. Put in a dash of Tabasco sauce. Remove from stove. Keep in warm bowl. Pour into shells. Fill to rounded. cool on counter. Then put in the fridge for 3 hours with Saran wrap that has been sprayed with Pam. Decorate top with whipped cream stars and chocolate curls. My friend also decorates the top with standing Ghridelli squares. |
