3-4 lbs fresh string beans cleaned and snapped
3-4 quarts boiling water
2 whole sweet onions, chopped
3-4 smoked turkey butts
2 white or red potatoes peeled and diced
2 chicken bullion cubes or 1 quart chicken broth
1 clove fresh minced garlic or 1 tbsp chopped garlic from jar
1/2 cup white sugar
3 tbsp olive oil
1 tbsp seasoning salt
1 tsp white pepper
1 tsp paprika
1 tsp onion powder

Directions:

In a large pot put water bring to a boil. Add turkey butts. In a frying pan add olive oil over a medium heat. Add chopped onions and cook until onions are tender. Remove and add onions to pot with turkey butts. Cook turkey butts until tender approximately 30-45 minutes. Remove turkey butts and drain. Remove meat from turkey butts and place them back into the pot. Add snapped string beans, garlic and all dry ingredients. Also add chicken bullion or chicken stock. Cook for approximately 1 1/2 to 2 hours until beans are tender. Add potatoes and cook for another 30-45 minutes.

May need to add additional sugar for slight sweetness and seasoning salt. Salt pork may be substituted for smoked turkey butts, or other smoked meat may be substituted.
