3 cups each of cut up broccoli, cauliflower, carrots, carrots
1 each sliced red pepper, yellow pepper, red onion, yellow squash, zucchini.
1/2 c olive oil
1/4 c balsamic vinegar
1 t salt
1 t pepper

Directions:
Directions:
Mix vinegar, oil, salt and pepper. Blend well. Combine veggies and toss with dressing. Bake in flat pan or casserole, uncovered 10-15 min at 400º. Need to be tender, but a little charred.
