2 (or more) Tbsp. cornstarch
1/2 tsp. salt
Dash pepper
1 lb. natural Swiss cheese, shredded (4 cups)
2 cups buttermilk
Dash ground nutmeg

Directions:
Directions:
In mixing bowl combine cornstarch, salt, nutmeg and pepper. Toss Swiss cheese with cornstarch mixture.
In saucepan carefully heat buttermilk (it will curdle if it gets hot). When warm, gradually add cheese; stir constantly till cheese melts and mixture thickens. Transfer to fondue pot; place over fondue burner. Spear dipper with fonue fork; dip in fondue, swirling to coat.
Suggested dippers: French bread, English muffins, hard rolls.
