Crust:
3 cups graham cracker crumbs (about 2 packages )
2 heaping tablespoons of powdered sugar
1/2 cup butter, melted
Filling:
1 (8 oz) package cream cheese, softened
1 cup granulated sugar
small package lemon Jell-o
1 cup boiling water
1/4 cup lemon juice
1 (12 oz) can evaporated milk, well chilled

Directions:
Directions:
Make the crust by mixing the crushed graham cracker crumbs, powdered sugar and melted butter until well combined. Spray a 9 x 11 glass cake pan with Pam. Press crumbs into the bottom. Set aside.
Whip the cream cheese and sugar together until soft and fluffy, set aside. In a separate bowl, pour boiling water over Jell-o, stirring until completely dissolved. Add in lemon juice and set aside to cool. Whip the evaporated milk until it fluffs and forms stiff peaks. Stir the Jell-o into the cream cheese mixture. With a spatula, fold in the whipped milk. Pour the entire mixture into graham cracker crust. Chill for several hours. Serve with desired topping.
