Optional meatballs:
1 10 oz. pkg frozen spinach
1 1/2 lbs. lean ground beef
1/3 C dry bread crumbs
1 egg
1/2 T\tsp. Salt and pepper
2 TBSP salad oil
In a large bowl comb ine spinach, beef, bread crumbs, egg, salt and pepper. Shape into 1" balls. Brown meatballs in dutch oven on all sides. Set aside.

1 large onion, coarsely chopped.
1 cup sliced celery
1 cup sliced carrots
4 - 14 1/2 oz cans of regular strength chicken broth
1 - 16 oz can tomatoes
1 - 16 oz. can kidney beans
1 C. chopped cabbage
1 cup elbow macaroni
1/4 tsp oregano
1/4 tsp. basil
In dutch oven, add onion and cook until soft. Stir in broth, tomatoes( break up with spoon) and the liquid, spices.
Cover, reduce heat, simmer 10 minutes.
Add vegetables Simmer 10 minutes.
If you wish to thicken, add 1 TBSP of corn starch now.
Stir in pasta, cover and simmer about 10 minutes, until pasta is al dente.
Place meatballs in soup, heat up.
Serve with Parmesan cheese.
