2-1/2 lb. thin cut beef brisket, trimmed of fat
1 C. dry red wine or beef broth
1 packet (from a 1.8 oz. box) of mushroom-onion soup mix
12 small red potatoes (1-1/2 lbs), well scrubbed
9 medium sized carrots (1-1/2 lbs.) cut in 2" chunks
1 large onion, quartered
3 - 6 cloves of garlic

Heat oven to 350. Pour wine into a 4 to 5 quart Dutch oven. Stir in soup mix until blended. Add beef and turn to coat. Add garlic cloves. Cover and bake 2 hours. Add potatoes,carrots and onion. Cover and bake 1 hour longer or until meat and vegetables are tender. Remove meat to cutting board. Cover loosely with foil and let stand 10 minutes. Cut in thin slices, against the grain. Arrange on serving platter with vegetables. Spoon some gravy over meat and serve with remaining gravy.
