27 oz coconut milk
15 cream of coconut
5 whole cloves
1 tsp cinnamon
1/4 tsp salt
2 eggs
3 cup sweetened shredded coconut
1 tsp butter
12 slices bread

Directions:
Directions:
Heat the coconut milk, cream of coconut, cloves, 1/2 tsp cinnamon, and the salt over medium-high heat and simmer, stirring occasionally, until warmed through.
Remove from heat and set aside for 15 minutes, until cooled.
Remove the cloves.
Lightly beat the eggs, then slowly mix in the coconut milk mixture, whisking vigorously.
Combine the coconut with the remaining cinnamon on a plate.
Dip the bread into the coconut milk mixture until saturated, then press each side into the coconut and cinnamon mixture.
Cook on a buttered griddle over medium heat.
