Ingredients:  
10 Fresh chilies, minced (jalapenos, habaneros, serrano, etc. to taste.)
1 onion, very finely chopped
2 cloves garlic, minced
1 bunch Chopped cilantro, to taste
10 Tomatoes (roma are preferred)
2 tbsp. vinegar
1 lime, juiced
2 tbsp. olive oil
½ tsp cumin
Tabasco sauce to taste
Salt to taste

Combine chilies, onion, garlic and cilantro. Add tomatoes and remaining ingredients. Mix well and store in covered glass containers in refrigerator until needed. Makes about 2½ to 3 quarts sauce, depending on size of tomatoes.
