3 lbs lean ground beef
1 large onion, chopped
2 - 7 oz cans chopped green chiles, drained
7 cups shredded cheddar cheese
12 large flour tortillas
1 20 ounce can red chile enchilada sauce
1 15 ounce can tomato sauce

Directions:
Directions:
Brown the ground beef with the onions until meat is done and onions are translucent. Add the green chiles and set aside. Put 1/12th the mixture into each tortilla with 1/2 cup shredded cheese, roll up enchilada style. Place on a large baking pan. Repeat with all of the tortillas Stir together the enchilada sauce and tomato sauce. Pour evenly over the enchiladas.. Top with remaining shredded cheese. Bake at 350º for 25 minutes. Serve with sour cream on the side.

Bob Dana is married to Carol Middleton Dana, Jim Hemberry's cousin. Bob and Carol and Jim and I are close friends and we love spending time together, often taking vacations together and there is always a lot of laughter and fun involved. Bob and I do all the cooking and Jim and Carol do all the dishes -- Bob and I think it can't get better than that!

** This cookbook has taken a long time to put together. This was one of first recipes I put into it. Sadly, Bob died in September 2021 after a battle with glioblastoma, but he was an amazing, generous and kind man and I will always treasure the memories of cooking along side him.
