8 - 6" corn tortillas
8 beef hotdogs
8 ounces cheddar or cojack cheese
Vegetable oil

Slice cheese into 8 pieces, 1/2" x 6". Slice most of the way through each hot dog, lengthwise, leaving the bottom attached. Put a slice of the cheese into the groove you've sliced in each hot dog. Place a cheese filled hot dog on the edge of one tortillas, then roll the hot dog up in the tortilla, as tightly as possible, pig in a blanket style. Repeat with all of the hot dogs, set aside.

In a medium skillet, heat 1/4" vegetable oil to about 350º (medium heat), Using tongs, gently place 2 or 3 hot dog rolls into the pan, seam side down. Cook for about a minute to seal the seam, then turn and cook until the entire tortilla is crispy and golden brown. Remove from pan and place on a paper towel lined plate to absorb some of the oil. Repeat until all of the hot dogs are cooked.

Serve with salsa or mustard to dip into.

My friend Angie Padron, who really does not like to cook much at all, made these for us one day when we were having a yard sale together. I have to admit I was skeptical, but once I tried them, I agree, they are delicious.
