¼ - ⅓ cup butter
3 medium leeks, chopped
6 medium potatoes, chopped
3 cups chicken broth
1 cup milk
salt and pepper to taste

Directions:
Directions:
Cut leeks lengthwise and wash thoroughly under running water. Chop into small pieces and saute the leeks in butter until soft but not brown. Add chicken stock and pieces of potato. Simmer until potato is cooked. Season with salt and pepper. At the end, pass through food processor (lightly) and add milk. Reheat if eating immediately.
