Baked Salmon & Leeks in Parchment Recipe

Ingredients: 4 sheets parchment paper 4 salmon filets, 6 to 8 oz. each l bunch leeks, washed well and sliced thin Dry white wine Olive oil salt and pepper ground pepper 1 bunch chervil or other fresh herb, chopped Melted butter

Directions: Preheat oven to 350º
1. Fold a large sheet of parchment paper in half and cut out a heart shape about 3" larger than the fish filets. Place fish near the fold and place a handful of leeks next to it. Drizzle fish with wine and olive oil, and sprinkle with salt, pepper and chervil.
2. Brush edges of parchment paper with melted butter, fold paper to enclose fish and make small overlapping fold to seal the edges, starting at curve of heart. Be sure each fold overlaps the one before it so that there are no gaps. Brush the outside of the packet with melted butter. Repeat with the rest of filets.
3. Put the packets on a baking sheet and bake at 350º for 10-15 minutes until paper is puffed and brown. Makes 4 Servings.

Notes: Prepare everything ahead of time, then bake right before serving. You can replace leeks with long green onions. Use any favorite fresh herb with fish. Baking parchment is best used for this recipe. Bon Appetit!
