1 large eggplant
1 onion, minced
2 eggs
1/2 cup milk
1/2 cub butter, melted
1 1/2 tbsp lemon juice
1/3 tsp dry mustard
1 cup bread crumbs
1 cup sharp Cheddar cheese, grated
Salt and pepper to taste

Directions:
Directions:
Peel, cube and boil eggplant until tender. Drain and then mash it. Add onions, eggs and milk together and stir in additional ingredients except 3/4 cheese and 1/2 of the bread crumbs. Put mixture into a casserole dish. Mix remaining bread crumbs and cheese and put on top. Cook 30 min in oven at 350º
