6 doves, cleaned
6 slices thick, smoked bacon
3 jalapeņos

September 1st- go dove hunting! Clean doves and prepare grill. Wearing gloves to protect hands, slice peppers in half lengthwise. Remove seeds. Put 1/2 pepper inside each bird. Wrap the birds with a piece of bacon; secure with a toothpick. Grill about 10 minutes on each side.

Variation: Doves can be simmered in beef broth that has 2 T. liquid smoke added. Simmer 20 minutes; remove and then add jalapeņo and bacon and grill.

Variation: Marinate in a mixture of 1/2 c. oil, 3/4 c. lemon juice, 1 1/2 tsp. Worcestershire, 1 1/2 tsp. salt, 1/4 c. water. Marinade at least 2 hours; grill 30 to 40 minutes.
