6 medium tomatoes
4 tbsp. butter, divided
1 package frozen chopped spinach, thawed and squeezed dry
3/4 cup bread crumbs
1 tsp Italian seasoning
1/2 cup shredded mozzarella cheese
1/8 tsp garlic salt
1/8 tsp pepper.

1) Preheat oven to 375º.

2) Cut a thin slice off the top of each tomato. Scoop out the pulp leaving a 1/2 inch thick shell. Invert tomatoes onto paper towels to drain

3) Melt 2 tbsp. of the butter in a skillet, add spinach and cook 7 minutes. in a bowl, combine bread crumbs and Italian seasoning. Set aside 1/4 cup of crumbs for topping. Add the spinach and cheese to the remaining crumbs. Sprinkle tomato shells with garlic salt and pepper, stuff with spinach mixture. Place in a greased 9 x 13 inch baking dish.

4) Melt remaining butter, stir into reserved bread crumbs, then sprinkle over the tomatoes. Bake, uncovered for 20-25 minutes until crumbs are lightly browned.
