Marinade
1/3 cup olive oil
1/2 cup balsamic vinegar
1 tbsp. finely minced garlic
1 tbsp. basil, chiffonaded
2 tbsp. lemon juice
Salt and pepper to taste

Veggies
Summer veggies
2 small Japanese eggplant, 1/2" slices
2 yellow squash, 1/2" slices
2 medium zucchini, 1/2" slices
1 red onion, 1/2" slices

Directions:
Directions:
1. Marinate the vegetables for 20 minutes - 1 hour. Drain and wipe off any excess marinade, do not let them sit in the marinade longer than 1 hour.

2. Taste the marinade for salt, season vegetables if necessary

3. Grill on one side, turn and remove as soon as there are grill marks on the opposite side. The carryover cooking with finish the squash.

4. Can also bake in a 350º oven.
