1 frozen 9 inch pie crust
Black pepper
Thyme
2 cups grated Gruyere cheese
6 ripe plum tomatoes, cut in ¼” rounds and dried on towels
½ t. grated nutmeg
¼ t. black pepper
2 T. fresh thyme
1 T. chopped fresh parsley
1 T. olive oil
Feta cheese

Directions:
Directions:
Preheat oven to 375º.

As you roll out the pie crust, sprinkle with pepper and thyme. Pre-bake crust with pie weights (or dried beans) and then without weights (or as the package instructs)

Layer the Gruyere and the tomatoes in the crust. Sprinkle the top with the rest of the ingredients.

Bake for 30-40 mins. Serve at room temp.
