4 large pieces of chicken
1/2 C. flour
1/3 C. oil or shortening
1 tsp. salt
1/4 tsp. pepper
Sauce:
1 can (1 lb. 4 oz.) sliced or crushed pineapple
1 C. sugar
2 T. cornstarch
3/4 C. cider vinegar
1 T. soy sauce
1/4 tsp. ginger
1 chicken boullion cube
1 large green bell pepper, cut crosswise in 1/4-inch circles

1. Heat oil in large skillet. Preheat oven to 350º.
2. While oil is heating, wash chicken; pat dry with paper towels; coat chicken with flour.
3. Add chicken to the hot oil, a few pieces at a time, and brown on all sides. Remove as browned to a shallow baking dish, arranging pieces skin side up. Sprinkle with salt and pepper.
4. Make the sauce: drain the pineapple, pouring the syrup into a 2-cup measure. Add enough water to make 1 1/4 cups.
5. In a medium saucepan, combine sugar, cornstarch, pineapple syrup, vinegar, soy sauce, ginger and boullion cube. Bring to a boil, stirring constantly. Boil for 2 minutes and then pour over chicken.
6. Bake uncovered for 30 minutes. Add pineapple slices or crushed pineapple and green pepper on top. Bake 30 minutes longer or until chicken is tender. Serve over white rice. 4 servings.
