3 c hot cooked rice
2 c cut up turkey or chicken
1 med green pepper, chopped (about 1 c)
1 med onion, chopped (about 1/2 c)
1 c shredded Monterey Jack or mozzarella cheese (about 4 oz)
4 eggs
2 1/2 c milk
1 tsp salt
1 tsp dry mustard
1/2 tsp dried basil
1/2 tsp red pepper sauce
1/8 tsp pepper
1/4 c freshly grated Parmesan cheese
1 carrot, grated (optional)

Directions:
Directions:
Mix rice, turkey, green pepper, onion, Monterey Jack cheese (and carrot if using); spread in greased square pan 9x9x2. Mix eggs, mill, salt, mustard, basil, pepper sauce and pepper, pour over rice mixture. Sprinkle with Parmesan. Cook uncovered in 325º oven until set, 45 to 50 minutes. Let stand 10 minutes, cut into squares.
