4 eggs
1 cup oil
3 cups grated carrots
3 cups all purpose flour
1 1/2 cups sugar
2 teaspoons baking soda
1/2 tsp salt
2 tsp baking powder
1/2 cup nuts (chopped)
1/2 cup milk
1/2 tsp cinnamon

Directions:

Combine all dry ingredients. Add eggs, oil and milk. Mix well. Add carrots and nuts. Combine well. Pour into greased tube cake pan. Bake at 350 degree oven for 1hour and 15 min until done.

We sprinkle top of cake with confectioner's sugar- If the batter seems too thick, you may want to add the carrots before the milk, then add milk to get consistency you want
