3/4 cup dry red wine
1/2 cup chopped onion
1/4 cup lemon juice
1 tbsp Worcestershire sauce
1/2 tsp dried rosemary, crushed
1/2 tsp dried marjoram, crushed
1/2 tsp garlic salt
1/2 cup water
4-6 pound Beef rib roast

Directions:

Mix all ingredients together - except roast - in a bowl. Place meat in a plastic bag set in a shallow dish. Add marinade, close bag and place in frig for 6-24 hours - turning occasionally.

Preheat oven 325 degrees. Drain meat, discarding marinade. Place meat, fat side up, in a large roasting pan. Insert meat thermometer into center, do not allow thermometer to touch bones. Roast accordingly: 1 3/4 to 3 hours for Rare (140º), 2 1/4 to 3 3/4 hours for Medium (160º) or 2 3/4 to 4 1/4 hours for Well (170º). Transfer meat to cutting board, cover with foil and let stand 15 minutes before carving.
