1 c. sugar
1/2 c. water
1 tsp. cinnamon
1/2 c. salt
2 1/2 c. walnuts
1 1/2 tsp. vanilla

Directions:
Directions:
Heat walnuts in a 375º F oven for five minutes while sugar mixture is cooking.

In a 2 quart pan, than has been generously sprayed with Pam, heat and stir together sugar, water, cinnamon and salt until the sugar dissolves and mixture boils. Cook without stirring until it reaches a soft ball stage (about 236º F) Remove from heat.

Beat the sugar mixture by hand for about one minute until it gets creamy. Add vanilla and walnuts until the nuts are well coated. Turn onto a large piece of waxed paper until cool.
