4 Medium Artichokes
3 or 4 cups of seasoned Italian breadcrumbs
5 or 6 sprigs of parsley, chopped
2 large cloves of garlic, chopped
2 hardboiled eggs, cut into small pieces
2 medium tomatoes diced
2 T of olive oil

Directions:
Directions:
Pour the breadcrumbs into a mixing bowl
Add:
Parsley, garlic, eggs, tomato and olive oil.
Mix all ingredients together.
Stuff the mixture into the inside of each petal and place upright in the steamer pan.
Add water in the bottom of the pan and place the cover on top of the steamer and let them cook for approximately 30 or 40 minutes or until tender.
Remove from pan gently with prongs or large spoon and serve. They can be eaten with the fingers by pulling off each petal at a time. They also can be served hot or cold.
