1 C. shortening
1 1/2 C. brown sugar
2 eggs
3 C. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 C. diced rhubarb, small
3/4 C. coconut
Frosting:
3 oz. pkg cream cheese, soft
1 tbsp. butter, soft
1 1/2 C. powdered sugar
3 tsp. vanilla extract

Directions:

In a large bowl, cream shortening and brown sugar. beat in eggs. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in rhubarb and coconut(optional). Drop by teaspoonsful 2 inches apart on greased baking sheet. Bake at 350º for 12 minutes or until golden brown. Cool for 1 minute before removing to wire rack to cool completely. For frosting beat cream cheese and butter together. Add powdered sugar and vanilla. Spread over cookies.
