1 peck apples (10-12 pounds)
1 gallon sweet apple cider
6 C. sugar
1 Tbsp. cinnamon
1/2 Tbsp. ground cloves

Directions:
Directions:
Cook apples and cider until soft.  Press thru sieve.  Boil pulp until thick enough to heap onto a spoon, then add sugar and spices.  Continue cooking until thick enough that no liquid runs from the butter when tested on a cold plate.  Stir often as this sticks easily.  Pour while hot into hot jars leaving 1/4" headspace.  Process 10 minutes in
hot water bath.  6 pints
