1 c. seedless raisins
1 1/2 c. water
Cook raisins in water until tender.

3/4 c. sugar
3 Tbsp. corn starch
1/4 tsp. salt
1 tsp. vanilla*
1 Tbsp. butter
1 c. light cream OR 1 c. evaporated milk

Pastry for 2 crust pie.

Directions:
Cook raisins in water until tender. Add sugar, corn starch and salt. Add butter and vanilla. Slowly add the cream/canned milk cooking on medium heat and stir until thickened.
* may substitute lemon extract in place of vanilla
Roll pastry for 9 inch pie pan, pour in raisin mixture and top with additional 9 inch pastry.
Bake @ 375º for 30 minutes.
