½ c. butter
½ c. vegetable shortening
1 c. granulated sugar
1 c. brown sugar
2 eggs, well beaten
1½ tsp soda
2 T buttermilk
2 tsp freshly grated nutmeg
4 c flour
Pinch of salt
1 tsp lemon extract (or to taste)

Directions:
Directions:
Cream together sugars and butter and shortening. Blend in eggs and soda which has been dissolved in buttermilk, and three cups of the flour and remaining ingredients. Roll out dough immediately or chill overnight.

Roll out dough thinly on board sprinkled with remaining cup of flour. Dough should be very thin. Cut as desired - small 2-inch round is good size.

Bake at 325º for 6 to 8 minutes until desired degree of golden brownness.

This recipe makes a relatively small amount of dough but a large number of cookies due to thinness and small size. Be ready to spend some time doing this.
