8oz. Unsalted butter, softened
6oz. (2/3c.) Creamy peanut butter
3/4c. Granulated sugar
3/4c. Brown sugar, packed
2 eggs, large
1t. Vanilla extract
2-2/3c. all purpose flour
1/4c. Cocoa powder
1t. Baking soda
1c. Chocolate chips
8 peanut butter cups

Preheat oven to 350F

In stand mixer, cream together butter, peanut butter, sugar and brown sugar on medium high speed until light and fluffy.

Add vanilla extract and baking soda til combined.

Add cocoa powder (may require sifting beforehand if lumpy) and mix in slowly. Add all purpose flour and mix until not quite combined. You should be able to see some streaks of dry flour. Scrape down sides of bowl.

Add the peanut butter cups and chocolate chips. Mix just until flour is fully incorporated and peanut butter cups break up a bit.

Remove and scrape down bottom of bowl to make sure everything is combined.

Scoop into roughly 1-1/2T. scoops and place on baking sheet (about 12 per sheet)

Bake 5 minutes, rotate pan 180 degrees and bake an additional 5-6 minutes until center is set and no longer shiny.
