1½ c. Corn Meal
1 can Cream Style Corn
½ c. Onion, chopped fine
1 c. Cheddar Cheese
¼ c. Vegetable Oil
2 Eggs
1 c. Sour Cream
4 Jalapeno Rings, de-seeded and chopped fine

Directions:

1. Pre-heat oven to 450ºF
2. Pour 1 tbsp of oil into a cast iron skillet.
3. Place skillet in oven to heat
4. Mix all ingredients together well.
5. Pour mixture into heated iron skillet
6. Bake until brown (approximately 15 minutes)
