½ cup butter, softened
¾ cup sugar
1 egg
1 tsp. vanilla
2 cups flour
½ tsp. baking soda
½ tsp. salt

Directions:

1. Preheat oven to 375º

2. Use a mixer to cream softened butter and sugar together. Add egg and vanilla.

3. Combine flour, salt, and baking soda. Add to butter/sugar mixture and mix well.

4. Divide dough, roll, and cut into shapes. (No chilling necessary.)

5. Place cookie shapes onto a lightly greased baking sheet (or line sheet with parchment).

6. Bake cookies for 8 to 10 minutes.

This is Lesley's recipe. It's great because you can make the cookies right away and they don't spread. Chilled dough should be left at room temperature 20 to 30 minutes to soften before rolling.
