3 cups flour
½ tsp salt
½ tsp baking powder
1 cup (225 g) butter, softened (1/2 cup salted, 1/2 cup unsalted)
1½ (300g) cup sugar
2 large eggs
1 tsp vanilla
⅔ cup cocoa (use the good stuff- Droste, Galler, or Valrhona)

Preheat oven to 350F

Whisk flour, salt and baking powder in a bowl and set aside.

In a mixer with paddle attachment mix the butter, sugar, eggs, vanilla and cocoa. Gradually add the flour and mix until smooth. Wrap the dough in plastic and chill for at least 1 hour.

Roll the dough out onto a floured surface to approx ⅛ inch thick. Cut into desired shapes, brushing any extra flour off. Place on parchment lined baking sheet and bake for 8-11 minutes (8 min for ⅛ inch thick cookies and closer to 11 min for ¼ inch cookies). Edges will be firm and centers are slightly soft and puffed when done.

Transfer to a wire rack to cool.
