Jello Cake Cookies Recipe

1 (15.25 ounce) package white cake mix (Choose gluten free cake for gluten free)

½ cup vegetable oil

2 large eggs

1 Strawberry Jello Pack (Sugar Free)

1 Sugar free Banana Pudding Pack

2 Cups of Milk (Almond for Dairy Free)

1 container of dairy free cool whip

red and green food coloring

Directions:
Directions:
1. Preheat oven to 350º

2. Mix the cake mix, the Eggs, and oil in a large bowl.

3. Use an ungreased cooking sheet with parchment paper. Roll 1 inch balls from the batter made in step 2. Place 2 inches apart on the sheet.

4. Cook 8-10 minutes until a toothpick comes out clean.

5. Remove cookies and let cool on cooling rack.


While Cookies are Cooling:

a. Make Jello as directed on box. (Boil 2 cups of water and mix with jello mix. Then mix in 2 cups of cool water).

b. Make the banana pudding as directed on box. (Mix 2 cups of milk with the pudding mix.)

c. Split the cool whip in half in two bowls. Use the food coloring to dye one red, and one green. (Shooting for Grinch Green and Cindy Lou Red).


Once Cookies are Cool:

6. Leave cookies on the cooling racks, place them on top of cooking sheet.

7. Use toothpick to poke holes in cookies (8-10 holes per cookie).

8. Pour jello over cookies slowly. Until about 50% pink.

9. Place cookies in the fridge for approximately 10 minutes.


When you are ready to serve:

A . Remove cookies from cooling rack and place on service plates. Use a small sloop to spread a light layer of banana pudding on each cookie.

B. Top each cookie with a dollop of cool whip for icing.
