4 tbsp chili powder
2 tbsp kosher salt
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
2½ tsp cayenne pepper
2 tsp black pepper
1 tsp cumin
2 lbs boston butt roast
½ cup vegetable oil
1 onion finely chopped
4 cloves of garlic
1 jalapeno pepper

Dough
3½ cups masa
1 tbsp kosher salt
2¼ tsp baking powder
½ cup lard
2 to 4 cups cooking liquid

Meat Filling
In a small bowl, combine chili powder, salt, pepper, paprika, garlic powder, onion powder, cayenne pepper, and cumin. Divide into half. Cut boston butt into pieces and place in a 6-8 quart pan. Add ½ spice mixture and about 3 to 3½ quarts water, making sure meat is covered. Set over high heat , cover and bring to a boil. Once boiling reduce heat to low and simmer until meat is very tender and falling apart, about 2 to 2½ hours. Remove meat from liquid to cutting board. Leave cooking liquid in pan. Both meat and liquid need to cool slightly before making dough and handling. Remove any large pieces of fat and shred the meat
