1/2 c almond butter
1/2 c butter, softened
1 3/4 c sugar (plus 1/2 c for rolling)
2 eggs
1 tbsp vanilla extract
2 1/2 c all-purpose flour
3/4 tsp baking soda
3/4 tsp Himalayan pink salt
1/4 tsp cream of tartar
1/2 c toasted coconut
1/2 c toasted pecans, coarsely chopped

Directions:
Preheat oven to 350ºF. Line two baking sheets with parchment paper.
Cream the almond butter and regular butter.
Blend in 1 3/4 c sugar, until light and fluffy.
Blend in the eggs and vanilla.
Stir in the flour, baking soda, cream of tartar, and salt.
Stir in the coconut and pecans.
Using a 2 inch cookie scoop, scoop the cookie dough, rolling the tops of each dough ball in sugar before placing it on the pan.
Gently press down the tops of each cookie with a flat-bottomed cup.
Bake until the dough is no longer shiny on top and slightly browned around edges, about 12 minutes.
Remove from oven and cool on the pan for 5 minutes before transferring to a wire rack to cool completely before storing.
