2 cups butter
2 cups sugar
3 eggs
2 tsp vanilla
1tsp lemon extract
6 cups flour
1 tsp baking soda

Directions:
Directions:
Cut 4 pieces of waxed paper 14” by 12”. Cream butter and sugar. Beat in vanilla, lemon extract, and eggs until light and fluffy. In a bowl, combine flour and baking soda. Stir flour mixture into butter mixture until blended.

Divide dough into 4 pieces. Shape each piece into and 8 to 10 inch roll. Wraps rolls in waxed paper or plastic wrap. Place in plastic freezer container, wrap airtight in foil. Store in freezer.

To bake Cookies : Preheat oven to 350. Cut dough into 1/4 inch slices. Arrange slices on lightly greased baking sheet about 1½ inches apart. Sprinkle slices lightly with sugar, if desired. Bake 8-10 minutes until starting to brown around edge. Can also thaw dough, roll out, and cut into shapes.
