Sugar-Free Oatmeal Cookies

1/2 cup raisins
2 cups Bob’s Red Mill Organic Quick Cooking Rolled Oats
½ cup flour (any flour or brown rice flour)
1 teaspoon liquid Stevia or 2 teaspoons powdered Stevia
1/2 teaspoon salt
1 teaspoon baking powder
1 teas cinnamon
1 egg
1 teas vanilla
1/4 cup melted butter
1/4 cup coconut oil (or 1/2 cup melted butter and omit coconut oil)
Optional: 1/4 cup carob chips or unsweetened chocolate chips

Preheat oven 350 degrees
Place raisins in a small bowl and cover with water soak 15 minutes, reserve 2 tablespoon water and drain the rest.

In a large bowl stir oats, flour, Stevia, salt, baking powder and cinnamon.

Small bowl whisk egg, vanilla and water. Blend wet ingredients with dry. Add raisins and chocolate chips. Drop 1 tablespoon onto cookies sheet.

Note: best to scoop large tablespoon and roll in your hand to form a ball, add a little flour if needed, drop onto cookies sheet and press lightly with a fork to slightly flatten.

Bake until golden brown 15 – 18 minutes.
Cool on wire rack.
