2 1/2 cup flour
1 tsp baking powder
1 tsp salt
1 stick butter (softened)
2 cups sugar
2 eggs
1 15oz container ricotta cheese
3 Tbsp lemon juice
1 med lemon zested

Preheat oven to 375º


In a medium bowl mix together the flour, baking powder, and salt
In a large bowl of an electric mixer beat together the butter and sugar until light and fluffy. Add the eggs, 1 at a time, beating until incorporated. Add the ricotta cheese, lemon juice, and lemon zest. Beat until fully combined. Now stir in the dry ingredients.

Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) onto the baking sheets.

Bake each sheet at 375º for 15 minutes, Until slightly golden at the edges. Remove from oven and let rest for 20 minutes

Do not glaze until totally cooled
 

Glaze for cookie

3 Tbsp lemon juice
1 med lemon zested

Mix glaze ingredients together stirring until smooth. Spoon about 1/2 tsp onto each cookie using back of spoon to spread. Allow 2 hrs for glaze to harden

I have been told these are Italian wedding cookies. In my opinion, they are best right after glazing.
