Granny's Sweet Potato Pie Recipe

2 cups sweet potatoes, cooked and mashed
½ cup butter, softened
2 eggs, slightly beaten
1 cup sugar
¼ tsp salt
½ tsp ginger
½ tsp cinnamon
½ tsp nutmeg
½ cup milk
1 9 or 10" unbaked pie crust

Directions:
Directions:
Stir soft butter into hot potatoes. Add sugar and spices, mixing well. Combine eggs and milk, add to potato mixture; mix well. Pour into pie crust.

Cover edges with foil. Bake at 400º for 10 minutes.

Reduce temperature to 350º and bake for 30 - 45 minutes longer, or until pie tests done.
Remove the foil from edges to brown for the last 15 minutes or so,
