1 cup brown sugar, firmly packed
1 cup granulated sugar
1 cup unsalted butter(2 sticks), room temperature
2 large eggs
1 teaspoons pure vanilla extract
½ teaspoon kosher salt
1 teaspoon baking soda
1 ½ cups all-purpose flour
1 ½ cups uncooked oats
1 cups pecans, chopped
2 cup sweetened coconut flakes, firmly packed

Directions:

1. Cream butter and sugar until smooth.
2. Beat in eggs and vanilla.
3. Sift dry ingredients and add.
4. Fold in everything else.
5. Chill.
6. Drop on greased cookie sheet and bake 8 minutes at 350ºF.

I like to run the oats through the food processor until it is the consistency of flour, instead of leaving them whole.
