3/4 c. butter
1 1/2 c. dark brown sugar
2 TBS water
2 c. or 12 ounces of semi sweet chocolate pieces
Two eggs
2 1/2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
Andy’s mints chips
Chocolate sprinkle (optional)

Directions:
Directions:
Over low heat, cook butter, dark brown sugar, and water in a saucepan.
Add semi sweet chocolate pieces stir until partially melted then remove from heat and continue to stir until fully melted

Pour into a mixing bowl and cool (10 minutes). On high speed beat in two eggs, one at a time. Combine flour, baking soda and salt. Add to wet ingredients, starting on low speed beat until blended.

Chill dough for one hour. Line cookie sheets with parchment paper.

Preheat oven to 350°
Using a cookie scoop, scoop out the dough making sure to leave at least 2 inches as these cookies spread
Bake for 12 to 13 minutes, no longer!

I chose these cookies because I can remember my mom making these every Christmas when I was little. Unfortunately, the mints that she used to use are no longer made.  So for years, we did not have these cookies. I had to change the recipe just a little bit and substitute in a different kind of mint. It’s not quite the same as what Mom used to make but it does make it easy to remember when I was little biting into that chocolate minty Christmas cookie.
