1 Carton of Just Egg
2 lbs Potatoes Cubed
Salt and Pepper to Taste
2-3 Sticks Plant Base Butter

Optional
2 Plant Based Chorizo Links
4 Plant Based Hotdogs
Applesauce
Sour Cream Plant Based

Directions:
Directions:
Melt the butter in a large fry pan. Add potatoes and season to taste. After potatoes are fork tender, add the carton of Just Egg. Cook until “Eggs” are consistency of scrambled eggs.
You can also cook some vegan chorizo on the side and add it after everything is cooked!
Serve with the homemade tortillas
You can also top with vegan sour cream and applesauce.
For kids, you can chop up vegan hot dogs and add them instead of chorizo
